Today on Booze On The Rocks, we make a Sunlight Sling cocktail. David Melia, the author of Bohemian Mixology, created it and showcased it on Instagram. This adaptation gives you the taste of pineapple rum while using a bold, full-flavored rum. Including the apricot liqueur and Cointreau builds out the depth and flavor, balanced by the pineapple and lime juice. Try it out and let me know what you think.

2 oz/60 ml Rum
.5 oz/15 ml Apricot Liqueur
.5 oz/15 ml Cointreau
1 oz/30 ml Lime Juice
1 oz/30 ml Pineapple Juice
.5 oz/15 ml Orgeat
5-6 Dashes of Paychaud’s Bitters
1. Add all of the ingredients to the shaker tin except the bitters.
2. Shake with crushed ice for 5-8 seconds.
3. Fill a tall glass half way with crushed ice.
4. Free our the mixture into the glass.
5. Fill remaining space with crushed ice.
6. Latter the bitters on top.
7. Garnish with a spent lime husk.
